Simple is best.
Dashi broth made from bonito flakes from Ibusuki and mackerel flakes from Yaizu is combined with kaeshi(soy sauce, sugar, mirin), and soba noodles made from Hokkaido Horokanai buckwheat flour, beaten at the two-eighth method, are poured over the broth.
